Receta Skinny Eggplant Parmesan

Ingredientes
- Â Â Cooking Spray - Extra virgin olive oil Flavor
- 1 c. Italian seasoned bread crumbs
- 1/2 c. flour
- 1/4 c. grated Parmesan cheese
- 3 x egg whites
- 1 lrg eggplant, cut into 1/2" pcs
- 2 c. marinara sauce
- 3 ounce sliced mozzarella cheese
- 3 ounce sliced provolone cheese
- 1/4 c. grated Parmesan cheese
Direcciones
- Preheat oven to 450 F. Spray a 9 x 12 baking dish with cooking spray.
- Mix together bread crumbs, flour and 1/4 c. Parmesan cheese. Put on a plate or possibly platter (for breading).
- In separate bowl, whisk egg whites. Dip eggplant slices into whites, then bread crumb mix. Place in baking dish. Lightly spray tops with veg. oil and bake in preheated 450 F oven for 10 min. Turn over.
- Spray with cooking spray and bake for another 10 min.
- Remove from oven. Reduce heat to 375 F. Top with marinara sauce and cheese. Return to oven and bake for another 20 min, till eggplant is fork tender. Remove from oven and serve.
