Receta Smoked Pork And Black Eyed Peas With Collard Greens

Ingredientes
- 1 lb boneless smoked pork chops, cooked and cut into 1/2 inch pcs
- 10 lrg collard green leaves, washed and cut into 1/2 inch strips
- 2 Tbsp. extra virgin olive oil
- 1Â 1/2 c. cooked black-eyed peas
- 1/4 c. sweet-warm mustard
- 1/4 c. prepared warm sauce
- 3 Tbsp. molasses
- 1 tsp grnd caraway seeds
- 3 Tbsp. unsalted butter
- 1/3 c. water
- Â Â Salt, pepper
- 6 x prebaked buttermilk biscuits
Direcciones
- In a large pan, cook collard greens in oil over medium heat 5 to 7 min, stirring frequently.
- Add in pork, black-eyed peas, mustard, warm sauce, molasses, caraway seeds, butter and water and mix well.
- Cook 7 to 8 min, stirring occasionally, till greens are nearly tender and mix is thickened slightly.
- Season to taste with salt and pepper.
- Remove from heat and let cold down slightly
- Cover bottom of lightly greased 2-qt round baking dish with bottom half of biscuits.
- Spoon in filling and cover with top half of biscuits.
- Bake at 400 degrees on center rack for approximately 35 min or possibly till filling is warm.
- Remove from oven and serve.
