Receta Smoked Salmon Soup With Baby Shrimp And Vodka

Ingredientes
- 2 Tbsp. extra virgin olive oil
- 2 x celery, finely, minced
- 1 sm red onion, minced
- 1/2 x red bell pepper, finely, minced
- 1 c. smoked salmon, cleaned, minced, small
- 1 ounce vodka
- 6 c. fish stock or possibly 6 c. vegetable stock
- 1/4 c. finely minced fresh basil
- 2 Tbsp. chili pwdr
- 1/2 tsp sea salt
- 1/2 tsp white pepper
- 1 c. cooked salad shrimp
- 1 c. table cream
- 1/4 c. finely minced fresh parsley
Direcciones
- Preparation time is 25 min.
- In a large soup pot, heat the oil. Add in the celery, onion and red pepper; saute/fry for 1 minute.
- Add in the smoked salmon and saute/fry another 2 min.
- Add in the vodka and saute/fry 2 more min.
- Add in the stock, basil, chili pwdr, salt and white pepper.
- Bring to a boil; reduce heat and simmer for 15 min.
- Add in the shrimp and cream. Simmer gently till heated through.
- Garnish with parsley and serve immediately.
