Receta Smoked Tuna

Ingredientes
- 3/4 c. extra virgin olive oil
- 1 Tbsp. Dijon mustard
- 1/4 tsp Tabasco sauce
- 1 tsp dry parsley
- 1 tsp dry basil
- 1 tsp dry thyme
- 2 x cloves Caramelized Garlic (see recipe)
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- Â Â Juice of 1/2 lemon
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. dry white wine
- 1 c. Grilling Vinaigrette (see above)
- 1 Tbsp. minced fresh ginger
- 1 tsp soy sauce
- 1/2 tsp sesame oil
- 1 lb tuna steak 1" thk
- 1/2 c. hoisin sauce
- 1/4 c. catsup
- 2 Tbsp. soy sauce
Direcciones
- Grilling Vinaigrette: Mix well and allowed to sit at room temperature to enhance its flavor.
- Combine the Grilling Vinaigrette, ginger, soy sauce, and sesame oil in a non-reactive bowl. Add in the tuna steak and marinate for 1 hour in the refrigerator, turning the tuna once or possibly twice.
- Smoke the tuna for 45 to 50 min. Refrigerateto serve. Serve with dipping sauce.
- Dipping Sauce: Combine ingredients in a small bowl and mix well.
- Comments: Tuna is a good choice for smoking because it has a high fat content. It is especially tasty with an Oriental-style dipping sauce.
