Receta Smoky Sausage Lentil Soup

Ingredientes
- 1 Tbsp. extra virgin olive oil
- 1 x onion minced
- 4 x celery stalks sliced
- 6 ounce smoked sausage coarsely minced
- 4 c. nonfat chicken broth or possibly vegetable stock
- 4 c. water
- 2 c. lentils (green)
- 1 x strip orange rind (3 inches long)
- 1 tsp dry marjoram crumbled
- 1 tsp dry savory crumbled
- 3 x carrots peeled and sliced
- 2 x potatoes peeled and diced
- Â Â salt and pepper
Direcciones
- In large heavy saucepan, heat oil over medium heat; add in onion and cook for 5 min, stirring occasionally. Add in celery and sausage; cook for 5 min, stirring occasionally.
- Add in stock, water, lentils, orange rind, marjoram and savory; bring to boil. Reduce heat, cover partially and simmer for 30 min.
- Add in carrots and potatoes; cover partially and simmer, stirring occasionally, for 35 min or possibly till lentils are tender. Throw away orange rind. Season with salt and pepper to taste.
- Makes 6 main-course servings- about 1 1/4 c. each.
