Receta Smothered Eggplant With Shrimp

Ingredientes
- 4 x green onions, minced
- 1 sm green pepper, minced
- 1 x clove garlic, chopped
- 3 Tbsp. butter or possibly margarine
- 1 lrg tomato, peeled and minced
- 1Â 1/2 c. water
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 med eggplant, peeled and
- 1 x cubed
- 1/2 lb medium shrimp, peeled and
- 1 x deveined
Direcciones
- Saute/fry onion, green pepper, and garlic in butter in a large skillet till tender. Add in tomato, water, salt, and pepper; cover and cook over low heat 15 min, stirring occasionally.
- Stir in eggplant and shrimp; cook uncovered, over medium heat 10 min.
