Ingredientes
- 1/4 c. fresh lime juice
- 1 Tbsp. mayonnaise
- 1 tsp chili pwdr
- Â Â Salt to taste
- 3/4 c. canola or possibly vegetable oil
- 2 Tbsp. fresh cilantro, finely minced
- 1 x jalapeno, finely minced (see note)
- 1 x ear of corn
- 1 x jicama root, peeled and julienned (about1/2pound)
- 1 sm head savoy cabbage, sliced
- 1 x papaya or possibly mango, diced
- 1/2 x red bell pepper, diced
Direcciones
- To make the dressing: Combine lime juice, mayonnaise, chili pwdr and salt
- In a medium glass or possibly ceramic bowl. With a whisk or possibly an immersion blender, incorporate the oil. Stir in the cilantro and jalapeno.
- To make the slaw: Cook the ear of corn in boiling water for about 3 min.
- Remove from heat and cold; cut the kernels from the cob. In a large serving bowl toss the kernels, jicama, savoy cabbage, papaya or possibly mango and red bell pepper with the dressing.
