Receta Spanish Brown Rice

Ingredientes
- 2 T extra virgin olive oil
- 4 c. finely minced celery
- 2 lg. minced onions
- 2 sm. carrots, thinly sliced
- 1 green pepper, minced
- Warm chiles (optional)
- 1 c. brown rice
- 1 can tomato pcs and juice
- 2 T tomato paste or possibly 1 can tomato sauce
- 2 c. chicken broth/stock and water
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 T sugar
- 1 T Louisiana warm sauce
- 1/4 teaspoon garlic (optional)
- 1 teaspoon coriander (optional)
- 1 teaspoon cumin (optional)
- 1/2 teaspoon turmeric (optional)
Direcciones
- Saute celery, onions, carrots, green pepper, and chiles, if you like, in extra virgin olive oil till tender-crisp. Add in rice, stir 1 minute. Add in tomato pcs and juice (remove seeds, if practical). Add in tomato paste or possibly tomato sauce and chicken broth/stock.
- Bake in 325 degree oven with lid for 40 min in 2-quart casserole. Don't stir. Serves 6 to 8.
