Receta Spicy Black Eyed Peas (Great Cajan Dish)

Ingredientes
- 15 ounce Can Blackeyed Peas
- 1 Tbsp. Vegetable Oil
- 1 lrg Onion -- minced
- 3 x Cloves Garlic
- 1 Tbsp. Green Pepper -- chopped
- 1/4 tsp Cumin
- 1/2 tsp Tumeric
- 1/4 tsp Cayenne Pepper
- 1 c. Tomato Juice -- * see note
- 2 Tbsp. Lemon Juice
Direcciones
- * We used diced tomatoes.
- Heat the vegetable oil in a large skillet and fry onion till golden brown. Add in garlic, green pepper, tumeric, and cayenne pepper and fry for 2-3 min.
- Add in tomato juice (or possibly tomatoes) and cumin and cook for 5 min. Next add in black-eyed peas and a little water if needed. Let it simmer for 15 min.
- Stir in lemon juice. Serve over rice or possibly cous cous.
