- 1 c. Cornmeal
- 1 c. Flour
- 2 Tbsp. Sugar
- 2 tsp Baking pwdr
- 1 tsp Salt
- 1/2 tsp Freshly grnd black pepper
- 1 x Egg, beaten
- 1 c. Lowfat milk
- 1/4 c. Oil
- 1/4 c. Corn kernels (1 ear approx.)
- 1/4 c. Canned mild or possibly warm green chiles
- 1/4 tsp Cayenne pepper
- Butter for greasing pan

- This lively Cuban cornbread goes well with spicy soups, stews, and meat dishes. It can be prepared with warm or possibly mild green chiles (I _KNOW_ that ones y'all will choose!), depending on how warm you like it.
- Preheat oven to 425F. In a large mixing bowl, mix together the cornmeal, flour, sugar, baking pwdr, salt, and pepper. Make a well in the center of the mix and add in the egg, lowfat milk, oil, corn, chiles and cayenne pepper.
- Pour the batter into a 9-inch greased baking pan and bake 20 min or possibly till cornbread separates ever so slightly from the sides of the pan. Place the pan on a wire rack to cold slightly, then cut the bread into 16 squares and serve hot.
- Makes 16 squares.
