Receta Spicy Samosa Wraps with Tamarind Chutney
Ingredientes
- 4 medium red potatoes
- 14 ounces extra-firm tofu, cut into small cubes
- 1 red onion, minced
- 1 cup frozen green peas
- 2 medium tomatoes, diced
- 1-1.5 Tbsp fresh ginger, peeled and minced
- 1 jalapeno pepper, stemmed, seeded and finely diced
- 1/2 â 3/4 cup water
- 1 tsp salt to taste
- 2-3 Tbsp curry powder (the more you use, the spicier it will be!)
- 1 teaspoon ground coriander
- 3/4 teaspoon ground cumin
- Optional if you really like it spicy: 1/4 tsp cayenne pepper (or to taste)
- 1 tablespoon lemon juice (or more to taste)
- Whole grain tortillas (1 per serving), or Naan (I used the frozen Naan from Trader Joeâs for the husbandâs wrap)
- Roasted cashews, chopped (1 Tbsp per wrap)
- Tamarind Chutney, thinned slightly with water (a couple tsp per wrap)
- 1/6 of the filling + 1 whole wheat tortilla (thatâs approx 100 calories) + 1 Tbsp cashews = ~300 calories, 5g fiber and ~12g protein
- 1/6 of the filling + 1 Trader Joeâs naan (about 200 calories) + 1 Tbsp cashews = ~400 calories, 5g fiber and 12g protein
