  1. In a large bowl, stir together flours, baking pwdr, cinnamon, allspice and salt. In a small bowl beat together Large eggs, lowfat milk, oil and honey. Add in to dry ingredients. Stir till mix is just barely moistened. Stir in zucchini, raisins and lemon rind. Spoon into paper-lined muffin pans. Bake at 375F for 20-25 min or possibly till they test done.
  2. Yield: 12 large muffins
