  • 1 lb cleaned squid bodies cut 1/2"
  •     rings, and tentacles halved
  • 1/2 c. minced fresh basil leaves
  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. fresh lime juice
  • 1 x garlic clove pressed
  • 1/4 tsp dry warm red pepper flakes
  • 1 Tbsp. peanut oil

Direcciones

  1. Combine squid, basil, extra virgin olive oil, lime juice, garlic, and red pepper flakes in a bowl and mix well. Marinate squid, covered, in the refrigerator for at least 20 min and up to 1 hour.
  2. Heat a heavy skillet or possibly wok over medium-high heat till a drop of water sizzles on the surface, about 45 seconds. Pour peanut oil into the wok, add in squid, and cook, stirring frequently, about 2 min, till squid is opaque. Serve immediately.
  3. This recipe yields 2 servings.
  4. Comments: To turn this dish into a refreshing seafood salad, cold the finished dish in the refrigerator. Add in 1/2 c. minced celery, 1/2 c. minced cucumber and 1/4 c. minced bell pepper. Toss with an additional Tbsp. each of oil and lime juice. Season to taste with salt and pepper. (Serves 3)
