Receta Strawberry Salsa

Ingredientes
- 2 quart Ripe strawberries, hull/quarter/wash
- 2 c. Litchis, peel/pitt/drain
- 1 tsp Oil
- 1/2 c. Red onion, finely chopped
- 1 tsp Ginger, chopped
- 1/4 tsp Cardamom
- 1/2 tsp Jalapeno, chopped or possibly to taste
- 1 x Jigger dark rum
- Â Â Salt and pepper, to taste
Direcciones
- In a skillet, heat oil till warm. Add in onion, ginger, garlic, jalapeno, and cardamom. Cook till wilted, stirring occasionally. Stir insugar and cook till light brown. Remove from flame and add in rum (warning: may ignite).
- Return to heat and cook for two min till alcohol evaporates (flame will go out). Remove from heat and mix in berries and litchis. Adjust flavor with salt and pepper. Refrigerateor possibly serve hot with grilled chicken or possibly white fish such as snapper or possibly halibut.
- For best results, use fresh litchis. Canned litchis or possibly fresh honeydew melon may be substituted.
- Canned litchis can be found at any oriental grocery store or possibly supermarket.
