Receta STUFFED CAPSICUM
I made this as i had a lot of capsicum and didn't know what to make with them other than my usual chutney,sauce,pickle and so on.I had not tried this recipe which was given to me by my late mum.I am sharing this as a tribute to her on Mother's Day.Love you Mum.She was a pro at this.Whenever she made it it would stop coversations and be an instant hit.
Ingredientes
- 6 large red bell peppers
- 1/4 cup frozen mixed veggies(mix of carrots,beans,corn kernels and peas),boiled till tender but not mushy
- 2 spring onions
- 1/2 cup soft bread crumbs
- 1 cup grated cheddar cheese
- 1 tbsp chopped fresh basil(or dried basil)
- Salt and pepper to taste.
Direcciones
- Finely chop spring onions.Cut top off Bell peppers,reatin the top portion for future use
- Scoop out seeds
- Combine spring onions,boiled vegetables,bread crumbs,cheese,basil salt and pepper.
- Spoon filling into bell peppers
- Microwave on high for 8 minutes.
- Serve topped with the bell pepper tops.
