Receta Stuffed Italian Eggplant

Ingredientes
- 2 med eggplants
- 6 x scallions minced
- 2 clv garlic
- 1/2 c. extra virgin olive oil
- 1 lb grnd beef
- 16 ounce jar tomatoes
- 1 tsp dry oregano
- 1 tsp dry basil
- 1/4 tsp pepper
Direcciones
- Slice eggplant in half lengthwise. Scoop out insides, leaving 1/2 inch thick shell. Saute/fry onions, garlic, and eggplant pulp in the extra virgin olive oil.
- Brown the grnd beef. Add in the tomatoes and sauteed vegetables to the browned meat and mix together. Simmer till tomatoes are broken up.
- Spoon the meat mix into the shells, dividing equally. Bake in a greased baking dish covered at 375 for 45 min or possibly till the eggplant is done. Sprinkle with mozzarella and bake uncovered till the cheese is melted and browned.
