A recipe that is good enough for company and easy enough for weeknight dinners.

  • 4 skin-on de-boned trout fillets. (about 2 lbs total or 2-3 lb salmon fillet).
  • 2 slices multigrain bread, cubed
  • 1 chopped garlic clove
  • 1 red chili, chopped and seeded.
  • 1/4 cup olive oil
  • 2 large lemons, thinly sliced
  • 2 bunches of dill
  • a handful (or to taste) of parsley, thyme and oregano
  • 1/2 cup pine nuts
  • salt and pepper to taste
  • kitchen string

Direcciones

  1. Put the bread, herbs except for the dill, chili, pine nuts and garlic into the bowl of a food processor.
  2. Pulse while drizzling in the olive oil until coarse wet crumbs are achieved.
  3. Set this aside.
  4. Pre heat oven to 350 F
  5. (If using a salmon fillet trim it into a large rectangular piece, saving the trimmings for another dish, and then cut into 2 halves)
  6. Lay 3 lengths of kitchen twine (long enough to tie up the stuffed fish) across a baking sheet vertically.
  7. Put 1/2 of 1 bunch of dill across the twine. (1 bunch for salmon)
  8. Put 4 slices of lemon on top of the dill.(8 slices for salmon)
  9. Lay 1 trout fillet skin side down over the lemon.
  10. Put 1/2 half of the stuffing mix and push it onto the fillet.
  11. Lay a second fillet on top of the filling skin side up.
  12. Put 4 slices of lemon on top of the fillet.
  13. Lay the other half of the dill on top of the lemon.
  14. Tie the string to hold everything together. Do not tie too tightly, just enough to hold it all together.
  15. Repeat with the rest of the fillets, stuffing, lemon and dill.
  16. Bake for 30 to 35 minutes.
  17. Let rest when done for 5 minutes.
  18. To serve place on a platter and snip the strings and remove.
  19. Make sure to include some lemon and stuffing in each serving.
