  1. Defrost cod fillets if frozen and lay out in a large baking dish.
  2. Sprinkle the onions evenly over the cod.
  3. Shake the can of coconut milk well and pour into a mixing bowl.
  4. Add the sirachha sauce, thyme, chipotle seasoning and blend well.
  5. Pour over the cod and onions.
  6. Bake in a 350 degree oven for 15 minutes.
  7. Sprinkle the coconut evenly over the top and bake for an additional 5 minutes.
  8. Serve hot with plain rice or potatoes.
