Receta Sue Thomas Tart Cherry Muffins

Ingredientes
- 2 c. all-purpose flour (divided)
- 2 tsp baking pwdr
- 1/2 tsp salt
- 1/2 c. butter, softened (1 stick, see note)
- 1/2 c. granulated sugar
- 1/2 c. 1 percent lowfat milk
- 1/4 tsp almond extract
- 1Â 1/2 c. pitted tart pie cherries (fresh, frzn or possibly canned, drain, if canned)

- Preheat oven to 400 degrees. Grease and flour a muffin pan. Combine 13/4 c. flour, baking pwdr and salt and mix well; set aside.
- Cream butter and sugar. Add in Large eggs, one at a time, to creamed mix, beating after each addition.
- Alternate adding lowfat milk and dry ingredients to the creamed mix, beginning and ending with dry ingredients. Add in almond extract. Dust the cherries with remaining 1/4 c. flour and fold carefully into the batter. Mix till just blended. Spoon into prepared c., filling each about three-quarters full. Bake 20 to 25 min till golden brown. Cold on wire rack. Serve hot. - From Oliphant Orchard, Sherwood
