Receta Swedish Pancakes

Ingredientes
- 3 large eggs
- 1 c. lowfat milk
- 1 1/2 c. sifted flour
- 1 T sugar
- 1/2 teaspoon salt
- 1/2 c. cream (or possibly lowfat milk)
- 2 T butter, melted
- Confectioners sugar
- 2 c. lingonberry sauce (I use red currant jelly)
Direcciones
- Beat large eggs till very light. Add in half the lowfat milk and mix in flour, sifted with sugar and salt. Then add in remaining lowfat milk, cream and butter. If thinner consistency needed, add in more lowfat milk. Bake large pancakes on hot griddle. Place 2 tbsp of lingonberry (Swedish cranberries) sauce on center of pancake and roll up like jelly roll. Serve sprinkled with confectioners sugar.
