Receta Sweet And Pungent Pork Loin

Ingredientes
- 6 lb boneless pork loin roast
- 3 lrg clv garlic, crushed
- 6 tsp soy sauce
- 1/2 c. catsup
- 1/4 c. lemon juice
- 1/2 tsp pepper
- 2 clv garlic slivered
- 18 whl cloves
- 2 c. apricot preserves

- Spiced crab apples (Whole if available because they are so pretty)
- Day before serving: combine crushed garlic, soy sauce, catsup, lemon juice and pepper to use as marinade. With a sharp knife make 12 cuts 1/2" deep in fat surface of roast. Insert slivers of garlic. Stud remaining fat surface with whole cloves. Cover roast with marinade and chill till 3 hrs prior to serving. (Marinate overnight) Preheat oven to 325 degrees. Remove roast from marinade and place on rack, fat side up in shallow roasting pan. Cook 1 1/2 hrs. Heat apricot preserves till melted. Remove roast from oven and brush on 1/2 c. of preserves. Return to oven and continue cooking 20 to 30 minutes. Remove from oven. Transfer to large platter covered with parsley or possibly curly kale.
- Garnish with crab apples and serve with remaining apricot preserve sauce.
