Receta Sweet and Savory Shrimp

This dish is so easy to make and finger lickin' good.
Goes really well with hot jasmine rice.

  • - 1 lbs shrimp (with shell on)
  • - 2 tbsp tamarind
  • - 3 tbsp hot water
  • - 2 tsp salt
  • - 1 cup cooking oil
  • The Sauce:
  • - 3 tbsp margarin
  • - 3 tbsp sweet soy sauce
  • - 2 or 3 tbsp lemon juice

Direcciones

  1. * if you're using tamarind juice, omit hot water.
  2. Combine tamarind cubes with the hot water, set aside for 1-2 minutes. Then squish the tamarind 4-5 times with a spoon or with your finger until the water becomes muddy.Set aside.
  3. Using a pair of scissors, cut the shrimp along its back and clean the vein out. Rinse and set aside.
  4. Pour tamarind juice into the shrimp, add the salt. Mix them all together until it coats evenly. Set aside for 15-20 minutes.
  5. Heat the oil in a wok with medium high heat. When it's ready, stir-fry the shrimp altogether in the oil for 2-3 minutes. Set aside.
  6. Using a clean wok, melt the margarine in medium high heat and stir-in the sweet soy sauce, lemon juice and the shrimp. Toss well and cook for another 2-3 minutes and serve.
  7. Garnish with chives or serve on a bed of lettuce.

    We made this recently and everyone enjoyed it, especially our kids. They liked the sweet and slightly salty flavor. We cooked with the shell removed to make the eating easier (mostly for the kids).

        This dish is simple to prepare especially if you have tamarind handy in your pantry. The slightly sweet and tangy flavors of the tamarind make the shrimps light and enjoyable.
