  1. In a dutch oven or possibly large skillet, brown the pork chops. Add in onions, juice from the pineapple, vinegar, soy sauce, sugar, ginger, salt and pepper.
  2. Cover pan and simmer for 1 hour or possibly till pork chops are tender.
  3. Set pork chops aside.
  4. Combine cornstarch and water, then stir into pan; add in water chestnuts, bell pepper, and chunks of pineapple. Bring to a boil and cook till sauce has thickened to desired consistency. Add in pork chops and cook till heated through.
  5. Serve over white rice, pasta, or possibly noodles.
