  • 1/4 c. lowfat milk
  • 1/2 c. all purpose flour
  • 1 c. fresh corn kernels (1 lg. cob)
  • Healthy pinch salt
  • 2 teaspoon baking pwdr
  • Oil for frying

  1. Beat large eggs and lowfat milk together. Add in flour and fold in well. Stir in corn and salt. Just before cooking, add in baking pwdr. Heat 1 1/2" of oil in a skillet. Drop batter by spoonfuls into oil and fry on both sides just till crisp and golden brown, about 1 minute. Drain on paper towels and serve immediately. Makes 14 fritters.
