  2. Soak the dry fruit in the water with 1 tsp. of the vanilla for 40 min.
  3. Heat the oil in a wok; add in almonds and stir-fry till toasted, about 1 minute. Remove with a slotted spoon.
  4. Reduce the heat to moderate and add in 2 Tbsp. of the butter.
  5. Add in the onions and stir-fry till lightly browned.
  6. Add in 1/4 c. of the sugar and continue to stir-fry till the sugar is melted and lightly caramelized.
  7. Add in 1/2 tsp. of the cinnamon and the dry fruit mix. Stir- fry for 1 minute. Remove to a bowl.
  8. Heat remaining 2 Tbsp. butter in the wok; add in rice, remaining vanilla, sugar and the salt. Stir-fry till rice is in separate grains and some grains have toasted lightly.
  9. Push the rice up the sides of the wok and pour the fruit in the center.
  10. Fold in the rice.
  11. Turn out onto a platter and decorate with the toasted almonds.
  12. Sprinkle with the remaining cinnamon mixed with cloves.
  13. Serves 4.
