  1. 1. Peel and slice potatoes 1/4 inch thick. In a saucepan, with the 3 1/2 c. water, cook sweet potatoes till tender crisp, about 10 min. Drain reserving 11/2 c. cooking liquid.
  2. 2. Layer potat oes in a well greased 13x9x2 baking pan; add in reserved liquid.
  3. 3. Combine sugar, flour, cinnamon, nutmag and salt; sprinkle over potatoes. Dot with butter.
  4. 4. Cover with pastry for 13x9.
  5. Bake at 400 for 30-35 min or possibly till top is golden. Spoon into dishes; top with whipped cream if you like.
