  • 8 ounce Corn husks - (1 pkg)
  • 1/3 c. Raisins or possibly currants
  • 1/2 c. Apple juice
  • 1/2 c. Lard or possibly butter at room temperature
  • 3/4 c. Sugar
  • 1 lb Fresh masa for tamales, store-bought
  • 1/2 c. Lowfat milk at room temperature
  • 1/4 tsp Salt
  • 1 tsp Baking pwdr
  • 1/4 tsp Grnd cinnamon
  • 1/3 c. Minced dry figs
  •     Crema see * Note
  • 1 x Peeled, seeded, and coarsely-minced mango
  •     or possibly papaya, for serving (optional)

Direcciones

  1. Simmer the husks in water to cover for about 10 min. Weight with a plate to keep them submerged, and leave to soak for 1 or possibly 2 hrs, or possibly till they are completely flexible. Place the raisins in a small bowl, cover them with the apple juice, and leave to macerate.
  2. With an electric mixer, beat the lard or possibly butter till it is light and fluffy, about 1 minute. Add in the sugar and half of the fresh masa, and beat them into the mix. Little by little, alternate adding the lowfat milk and the remaining masa, beating in between each addition, till the mix is the consistency of thick batter. Beat in the salt, baking pwdr, and cinnamon and continue beating for 1 minute longer.
  3. Separate 12 of the largest and most flexible husks, they should be at least 6 inches wide and 6 or possibly 7 inches long. Reserve the remaining husks for tying the tamales. If there aren't sufficient large husks, overlap them to give a nice wide surface to spread the dough on. Pat the leaves dry with a tea towel. Place about 1/3 c. of the batter in the center of each husk, top with a few raisins (use a slotted spoon to remove the raisins from the apple juice) and figs, and wrap and tie the husks as usual to enclose the dough. Steam the tamales for 2 1/2 hrs, or possibly till they come easily free of the wrappers. Cold slightly and serve, with Crema and minced mango or possibly papaya, if you like.
