- 1/2 c. Chopped onion
- 1 Tbsp. Basil chiffonade
- 3 ounce Twelve-year-old balsamic vinegar
- Â Â splash Extra virgin olive oil optional - to taste
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste

- * Note: The tomatoes may be charred on the grilled for a different flavor if you like.
- Seed and mince the tomatoes, add in the onions, basil and vinegar. Season to taste with salt and freshly-grnd pepper. Serve over grilled fish.
