Direcciones

  1. Saute/fry onion, garlic & bell pepper in extra virgin olive oil & sherry/apple juice until soft. Add in tomatoes and veg. broth and bring to a boil. Simmer 7 min.
  2. Add in orzo and simmer another 10 min. Stir in basil before serving.
  3. Makes 4 servings.
  4. My notes: I made this over my lunch break and stuck it in the refrigerator
  5. so I could just reheat it for dinner. The orzo soaked up*a lot* of the liquid so I added another c. of veg. broth before reheating. I served it with a green salad. [Kelly]
