Receta Tomato Heaven
This is a delicious tomato appetizer served with fresh mozaralla and baguette slices. We had an abundance of cherry tomatoes in our garden so I used cherry tomatoes, but use the tomatoes of your choice. My dried tomatoes were some I had dehydrated myself, so they weren't packed in oil but I reconstituted them in a little oil.
Ingredientes
- 2 cups cherry tomatoes sliced in halves or quarters
- 1/4 cup sun dried tomatoes
- 1/4 cup olive oil
- 1/4 cup fresh basil, stems removed & chopped
- 1/4 cup balsamic vinegar
- 3 cloves garlic, minced
- 1/2 cup Kalamata olives, roughly chopped
- salt & pepper to taste
- fresh mozarella
- sliced baguette
Direcciones
- Combine all ingredients except mozarella and baguette in a medium bowl.
- Chill up to 2 hours.
- Serve the tomato mixture with slices of fresh mozarella on the baguettes.
