Receta Tortilla Turkey Soup Bon Appetit

Ingredientes
- 1 Tbsp. Extra virgin olive oil
- 1 lrg Onion, minced
- 4 ounce Green chiles, diced, liquid removed
- 1 tsp Chili pwdr
- 1 tsp Grnd cumin
- 1 lrg Garlic clove, chopped
- 1/2 tsp Dry oregano, crumbled
- 1/4 tsp Cayenne pepper
- 6 c. Chicken stock, or possibly canned broth
- 16 ounce Tomatoes, coarsely minced, ju
- 12 ounce Boneless turkey breast cutlets
- 1 c. Frzn kernel corn, thawed
- 1/3 c. Fresh cilantro, minced
- Â Â Salt and pepper
- 1Â 1/3 c. Monterey Jack Cheese, grated
- Â Â Tortilla Chips, broken into large pi
Direcciones
- Heat oil in heavy large saucepan over medium-low heat. Add in onion and saute/fry till translucent/soft, about 4 min. Add in chilies, chili pwdr, cumin, garlic, oregano and cayenne. Stir 1 minute. Fold in stock and tomatoes and their juices. Bring mix just to boil. Add in turkey and simmer till cooked through, about 3 min. Add in corn and simmer 1 minute. Fold in cilantro Season with salt and pepper. Ladle warm soup into bowls. Sprinkle each with generous amount of cheese and chips. Serve, passing extra cheese and tortilla chips separately.
