Receta Tropical Curried Chicken Salad

Ingredientes
- 375 gm Cooked chicken, cut in cubes (or possibly prawns can be used) (12oz)
- 2 x Bananas, peeled and sliced
- 1 Tbsp. Lemon juice
- 50 gm Cashew nuts, (2oz)
- 25 gm Raisins, (1oz)
- 50 gm Ready to eat apricots, roughly minced (2oz)
- 25 gm Sundried tomatoes in oil, roughly minced (1oz)
- 3 Tbsp. Reduced fat mayonnaise
- 1 Tbsp. Onion, finely minced
- 1/2 tsp Madras curry paste/pwdr
- 1/2 tsp Lemon juice
- 1 sm Apple, finely grated
- 1 tsp Mango chutney
- Â Â Salt and freshly grnd black pepper
Direcciones
- Mix together the salad ingredients.
- Combine the ingredients for the dressing and fold in with the salad just before serving.
- NOTES : A quick and easy tasty salad.
