Receta turkey and wild mushroom ragu

Ingredientes
- 1 1/2 cups unsalted butter
- 3 Tbsp minced garlic
- 6 cups diced sweet onions
- 3 lbs cleaned and sliced button mushrooms
- 2 lbs cleaned and sliced shiitake mushrooms
- 2 lbs cleaned and sliced oyster mushrooms
- 1/4 cup chopped fresh thyme
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh rosemary
- 1 1/2 quart dry white wine
- 1 quart turkey stock
- 1 can crushed tomaatoes with puree
- 10 lbs oven roasted turkey - cut in 1/2 inch
- salt and pepper to taste
Direcciones
- Over medium heat - melt butter, add garlic and onions, saute until golden brown.
- Add mushrooms and herbs. Saute until liquid evaporates and mushrooms are tender.
- Add wine, turkey stock, and crushed tomatoes - stir in turkey
- Stirring occasionally - heat to simmer and gently cook for 5- 10 minutes.
- Adjust seasonings as necessary.
- Spoon over cooked pasta and sprinkle with parmesan cheese.
