Receta Turkey Kofta in a spinach curry
Indian style turkey meatballs cooked in a spinach curry.
Ingredientes
- 2 lbs baby spinach or 2 boxes frozen chopped spinach thawed
- 1 bunch fenugreek leaves chopped (optional)
- 4-5 cloves garlic, minced
- 3 inch peice minced ginger
- medium onion finely chopped
- ½ tsp turmeric
- ½-1 tsp cayenne pepper
- 1 tsp ground cumin or garam masala
- ½ cup greek yogurt or sour cream
- 2 tbsp olive oil
- For Koftas
- ½ lb ground turkey
- salt and white pepper to taste
- 1 tsp ground green cardamom
Direcciones
- 1.Mix turkey, salt, white pepper, and cardamom and run it in a food processor till smooth. Make 1 inch meatballs and set aside
- 2.In a heavy bottom saute pan. Warm oil and add chopped onions and stir fry till transparent.
- 3.Add minced garlic and ginger and cook further, carefully add meatballs and fry evenly on all sides till they firm up.
- 4.Next add the spices and chopped fenugreek leaves and stir gently.
- 5.Add the pureed spinach and slowly bring it to a boil. Cover and cook till meatballs are completely cooked about 20 minutes. Be careful as the spinach boils it splutter.
- 6.Stir in the greek yogurt or sour cream and adjust the seasoning.
