Receta Vegan Carrot Cake Cupcake for ONE
Been a bit obsessed with single serving desserts lately. This one I think about DAILY. It is not overly sweet, and I feel almost less guilty because there are carrots in it. Score! It doesn't even need frosting.
Ingredientes
- 2 tbsp flour
- 1tbsp + 1 tsp coconut palm sugar
- 1 pinch baking powder
- 1 pinch baking soda
- 1/4 tsp cinnamon
- 1 pinch salt
- 1 tbsp unsweetened apple sauce
- 1 tbsp unsweetened vanilla almond milk
- 2 drops vanilla extract
- 1 tbsp shredded carrots
- 1 tsp raisins (for the top)
Direcciones
- Preheat oven to 350 degrees.
- Line a cupcake pan with 1 cupcake liner or grease one cupcake space.
- Add all ingredients together into a small bowl (except raisins)--easiest thing to do is whisk it all with a fork.
- Add raisins on top.
- Bake for 10 minutes or until a toothpick comes out clean.
