- 1 cup sugar
- 1/3 cup butter, softened
- 1 egg
- 1/2 teaspoon vanilla
- 3/4 cup milk
- 1 1/3 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- Preheat oven to 325 F.
- Spray a 9 inch springform pan with Bakers Joy (nonstick spray with flour)
- Pineapple Layer:
- 1/4 cup butter
- 2/3 cup packed brown sugar
- fresh pineapple rings
- maraschino cherries well drained and patted dry

- 3 (8-oz.) packages cream cheese, softened
- 3/4 cup sugar
- 1 teaspoon vanilla
- 3 eggs
- 1/2 cup sour cream

%20But%20I%20needed%20something%20EXTRA%20special%20and%20what%20is%20more%20special%20than%20cheesecake!%3C/p%3E%3Cp%3EWhat%20I%20could%20not%20figure%20out,%20was%20how%20to%20get%20perfect%20slices%20out%20of%20my%20fresh%20pineapple.%20Off%20to%20the%20store%20I%20went%20and%20came%20home%20with%20a%20Vacuvin%20Pineapple%20Slicer!%3C/p%3E%3Cp%3EIt%20was%20incredible%20how%20easy%20it%20was%20to%20use.%20I%20carefully%20cut%20the%20top%20off%20the%20pineapple,%20and%20popped%20in%20the%20slicer.%3C/p%3E%3Cp%3EI%20twirled%20the%20slicer%20down%20through%20the%20pineapple,%3C/p%3E%3Cp%3Eremoved%20it%20from%20the%20shell,%20leaving%20the%20core%20behind.%3C/p%3E%3Cp%3ERemoved%20the%20black%20handle%20and%20slid%20off%20the%20fruit.%20Perfect%20and%20so%20easy!%3C/p%3E%3Cp%3EThe%20fruit%20comes%20off%20in%20a%20spiral,%20so%20I%20just%20had%20to%20cut%20it%20into%20rings.%3C/p%3E%3Cp%3EI%20then%20planted%20the%20top.%20If%20you%20are%20interested%20in%20growing%20your%20own%20pineapples,%20check%20out%20my%20post%20Cooking%20with%20Pineapple%20to%20see%20how%20easy%20it%20is!%3C/p%3E%3Cp%3EWhile%20I%20was%20working%20with%20the%20pineapple,%20I%20had%20all%20my%20cheesecake%20ingredients%20on%20the%20counter%20coming%20to%20room%20temperature.%3C/p%3E%3Cp%3EI%20prepared%20the%20cake%20layer%20and%20topped%20with%20the%20fresh%20pineapple%20rings%3C/p%3E%3Cp%3EBaked%20it%20for%2025%20minutes,%20then%20topped%20it%20with%20the%20cream%20cheese%20layer.%20What%20a%20wonderful%20dessert!%20I%20had%20planned%20on%20topping%20it%20with%20whipped%20cream%20and%20a%20cherry,%20but%20when%20I%20thought%20about%20all%20that%20was%20in%20the%20cake%20(especially%20all%20the%20calories)%20I%20decided%20to%20serve%20it%20up%20straight!%3C/p%3E%3Cp%3EInside%20Out%20Upside%20Down%20Fresh%20Pineapple%20Cheesecake%3C/p%3E%3Cp%3ECake%20Layer%3C/p%3E%3Cp%3EBeat%20together%20softened%20cream%20cheese,%20sugar%20and%20vanilla.%20Add%20eggs,%20one%20at%20a%20time%20until%20blended.%20Gently%20fold%20in%20sour%20cream%20and%20pour%20over%20top%20of%20partially-baked%20cake%20layer.%20Bake%20for%2055%20minutes.%20Turn%20oven%20off.%20Leave%20cheesecake%20in%20oven%20and%20open%20the%20oven%20door%20for%20about%205%20minutes.%20This%20allows%20the%20cheesecake%20to%20cool%20slower%20and%20adjust%20to%20the%20outside%20temperature%20better%20and%20keep%20the%20center%20from%20sinking.%20Remove%20from%20oven%20and%20cool%20on%20wire%20rack.%20Refrigerate%20at%20least%204%20hours%20before%20serving.%3C/p%3E){kind=link}
