- 2 cups low-sodium chicken broth, warmed
- 1 pound loaf French bread, cut into 1/2 inch cubes
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1 yellow onion, diced
- 3 celery stalks, diced
- 1 1/2 cups prepared French chestnuts, halved
- 12 ounces mild fresh Italian sausage, casings removed
- 3 tablespoons chopped fresh flat-leaf parsley
