Receta Zucchini Nut Bread
I make several loaves of this at a time when my zucchini comes in out of the garden. Just bake and freeze. Awesome!!!

Ingredientes
- 3 cups unsifted all purpose flour
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1 tsp. salt
- 3/4 tsp. baking powder
- 2 cups grated unpeeled zucchini
- 1 tbsp. lemon peel, grated
- 1 cup finely chopped walnuts
- 1 cup raisins
- 2 cups sugar
- 1 cup salad oil
- 4 eggs

- Preheat oven to 350 degrees. Grease well and flour 2 (9X5X3) loaf pans.
- Sift flour, cinnamon, soda, salt and baking powder in medium bowl. Combine lemon peel, grated zucchini, walnuts and raisins in small bowl.
- In large mixing bowl, combine sugar, salad oil, and eggs with mixer till smooth.
- Add sifted dry ingredients.
- Add zuchinni mixture. Stir until combined.
- Pour batter into prepared pans (evenly).
- Bake 55-60 minutes or until tester comes out clean.
- Cool in pan 10 minutes (remove from pan)
- Cool on wire racks. Slice thin.
