Ingredientes

  • 2 1/2 c. unbleached all-purpose flour
  • 1 tsp salt
  • 3/4 c. chilled butter, (1 1/2 sticks) cut into small pcs
  • 8 ounce low-fat lowfat sour cream
  • 2 1/4 c. dry cherries
  • 1 c. ruby port
  • 1 stk cinnamon
  • 3 Tbsp. brown sugar
  • 1 1/2 Tbsp. grated orange zest

  2. Dry cherries soaked in spiced port makes a delectable filling for these flaky turnovers.
  3. In medium bowl, combine flour and salt. Cut butter into flour. Add in lowfat sour cream and gently mix with fork till moistened. Turn onto lightly floured surface and knead to create dough. Don't overwork.
  4. Divide dough into 6 even pcs. Roll into balls. Place each on a piece of plastic wrap; cover and flatten into 5-inch disk. Chill 30 min.
  5. Unwrap one piece of dough. Roll between pcs of plastic wrap into an 8-inch circle. Repeat with remaining balls. Cover and chill 1 to 2 hrs.
  6. Meanwhile, in a saucepan, combine cherries, port, cinnamon and brown sugar.
  7. Bring to simmer, remove from hear, cover and let sit 20 min. Remove cinnamon stick and drain cherries.
  8. Preheat oven to 350 F. Generously flour work surface. Cut 3-inch rounds from each disk. Place 1 Tbsp. of cherries and a healthy pinch of orange zest on each round. Fold dough in half and seal edges with fork. Repeat with remaining pastry and filling, making 28 to 30 turnovers.
  9. Bake till golden, about 35 to 45 min.
