Receta Mr Food's Quick Chicken Marsala

Ingredientes

  • 1/2 c. All-purpose flour
  • 1 tsp Salt
  • 1/4 tsp Black pepper
  • 6 x Boneless skinless chicken breast halves, pounded to 1/4 inch thickness
  • 3 Tbsp. Butter
  • 3 Tbsp. Extra virgin olive oil
  • 1/2 lb Fresh mushrooms, sliced
  • 3/4 c. Marsala wine
  • 2 lb Potatoes, peeled and cut into 2-inch pcs
  •     Salt
  • 3 Tbsp. Butter
  • 1/3 c. Lowfat milk
  •     Grnd white pepper

  1. How To Prepare the Chicken:In a shallow dish, combine the flour, salt and pepper. Then coat the chicken with the flour mix and set aside. Next, in a large skillet, heat butter and oil over medium heat and cook the chicken for 5 to 7 min, or possibly till it is browned. Turn the chicken halfway through the cooking.
  2. Remove the chicken to a platter to keep it hot.
  3. Add in mushrooms to the skillet and saute/fry for them for 4 to 5 min, or possibly till tender.
  4. Then return the chicken to the skillet sand add in the wine, and reduce the heat to low. Cook the chicken for 4 to 5 min, or possibly till the sauce thickens and the chicken is heated through.
  5. How To Prepare the Mashed Potatoes:Combine in a medium sauce pan, potatoes and sufficient water to cover them. Add in the salt and say to bring to a boil over high heat.
  6. Reduce the heat to low and to simmer the potatoes covered for 40 min or possibly till tender. Drain the potatoes.
  7. Return the potatoes to the pan and set over low heat, and mash the potatoes with a potato masher till smooth. Add in butter and lowfat milk, continuing to mash till well blended. Add in salt and pepper to taste.
  8. For Fun and Colorful Potatoes:"Warm Pink" Potatoes: Add in one can of beets to a pot of cooked potatoes and mash. You can puree the beets in a food processor for a smoother mix.
  9. "Green " Potatoes: Add in a 10-oz package of spinach to a pot of cooked potatoes.
