Receta Mr Food's Quick Chicken Marsala

- 1/2 c. All-purpose flour
- 1 tsp Salt
- 1/4 tsp Black pepper
- 6 x Boneless skinless chicken breast halves, pounded to 1/4 inch thickness
- 3 Tbsp. Butter
- 3 Tbsp. Extra virgin olive oil
- 1/2 lb Fresh mushrooms, sliced
- 3/4 c. Marsala wine
- 2 lb Potatoes, peeled and cut into 2-inch pcs

- 3 Tbsp. Butter
- 1/3 c. Lowfat milk
- Â Â Grnd white pepper

- How To Prepare the Chicken:In a shallow dish, combine the flour, salt and pepper. Then coat the chicken with the flour mix and set aside. Next, in a large skillet, heat butter and oil over medium heat and cook the chicken for 5 to 7 min, or possibly till it is browned. Turn the chicken halfway through the cooking.
- Remove the chicken to a platter to keep it hot.
- Add in mushrooms to the skillet and saute/fry for them for 4 to 5 min, or possibly till tender.
- Then return the chicken to the skillet sand add in the wine, and reduce the heat to low. Cook the chicken for 4 to 5 min, or possibly till the sauce thickens and the chicken is heated through.
- How To Prepare the Mashed Potatoes:Combine in a medium sauce pan, potatoes and sufficient water to cover them. Add in the salt and say to bring to a boil over high heat.
- Reduce the heat to low and to simmer the potatoes covered for 40 min or possibly till tender. Drain the potatoes.
- Return the potatoes to the pan and set over low heat, and mash the potatoes with a potato masher till smooth. Add in butter and lowfat milk, continuing to mash till well blended. Add in salt and pepper to taste.
- For Fun and Colorful Potatoes:"Warm Pink" Potatoes: Add in one can of beets to a pot of cooked potatoes and mash. You can puree the beets in a food processor for a smoother mix.
