  • 48 x Shrimp, large size, unshell
  • 1/4 c. Oil, for stir fry
  • 2 Tbsp. Black beans, fermented
  • 3 c. Garlic, chopped
  • 6 x Green onons, minced
  • 3 lrg Egg, beaten
  • 3 Tbsp. Water
  • 1 1/2 lb Pork, grnd or possibly beef
  • 1 1/2 c. Chicken stock
  • 1 1/2 Tbsp. Soy sauce, thin
  • 1 Tbsp. Sugar
  •     Cornstarch paste, don't u

Direcciones

  1. Peel, devein and butterfly shrimp. To butterfly, with a sharp knife, cut through the back about 3/4 of the way. Don't cut all the way through, remove black vein. set aside. Heat wok until smoking, add in oil, put all shrimp in at once, stir fry, keeping them in motion continuously so they cook proportionately. When they begin to curl, remove and set aside. Soak black beans, rinse and mash. Heat wok, add in 2 tbs oil, add in beans and garlic, stir until aroma is strong, add in meat in small pcs, stir fry till cooked, about 4 min. Add in broth, soy and sugar, stirring till it comes to a boil. Thicken mix with cornstarch paste, a little at a time, don't let it get too thick, should be like a cream sauce. Slowly stir in beaten Large eggs. Cook one minute, then add in shrimp. Mix well and serve.*note*
  2. Fermented black beans have a flavor which is very unique. Don't substitute with any other black bean mix as it will change the taste quite a bit.
  3. If you do, lotsa luck.... FBB are small, black, dry and very salty.
