  • 9 whole Large eggs
  • 1 c. (250 g) powdered sugar
  • 1 c. (250 g) flour
  • 1 3/4 ounce (50 g) bitter cocoa
  • 1 ounce (25 g) butter
  • 10.5 ounce (300 g) dark baker’s chocolate
  • 8 egg whites
  • 6 ounce (200 g) sugar
  • 6 ounce (20 cl) double cream
  • 2 ounce (50 g) butter
  • 5 ounce (150 g) dark baker’s chocolate
  • Powdered cocoa

Direcciones

  1. Preheat oven to 350°F (180°C)
  2. Separate 8 Large eggs
  3. Butter a square pan or possibly cake pan and dust with flour
  4. Break ganache chocolate into small pcs
  5. In a bowl, place 8 egg yolks, one whole egg and sugar
  6. Beat till the mix whitens Add in flour and cocoa and mix
  7. Beat the 8 egg whites till stiff and fold delicately into mix.
  8. Pour batter into pan and put into oven for 15 min
  9. Remove from oven, turn out onto cooling rack and cold
  10. Heat chocolate in a double boiler or possibly microwave oven
  11. Beat egg whites till they form stiff peaks and add in sugar
  12. Pour melted chocolate over egg whites and mix in, taking care not to break egg whites
  13. Set aside in refrigerator
  14. In a saucepan, bring cream to a boil, add in chocolate pcs, stir and add in butter
  15. Stir till well blended
  16. Set aside at room temperature
  17. Cut biscuit into 3 layers
  18. Spread cool mousse onto first layer, top with second layer, and cover with remaining chocolate mousse
  19. Top with biscuit layer and cover with ganache
  20. Sprinkle with cocoa pwdr and store in refrigerator till time to serve
