Receta All In One Fiesta Stew Pot

Ingredientes
- 3 Tbsp. All-Purpose Flour
- 1/2 tsp Grnd Cumin
- 1/2 tsp Chili Pwdr
- 1/2 tsp Garlic Pwdr
- 1/4 tsp Grnd Cinnamon
- 1 1/2 lb Beef Chuck 1" Cubes
- 2 Tbsp. Vegetable Oil
- 1 c. Beef Broth Defatted
- 1/2 c. Apple Juice
- 6 sm White Potatoes Peel and Cube
- 1 med Green Pepper Core, seed, 2" strip
- 1 med Red Pepper Core, Seed, 2" strip
- 1 med Onion Peel & Sliver
- 10 ounce Tomatoes With Green Chilis
- 8 ounce Tomato Sauce
- 2 Tbsp. Honey
- 2 x Granny Smith apple Core, 1" cubes
- 15 1/4 ounce Red Kidney Beans Liquid removed
- 2 Tbsp. Minced Parsley Shredded Cheddar Cheese Garnish Black Olives Coarsely minced
Direcciones
- Combine the flour, cumin, chili pwdr, garlic pwdr and cinnamon in a large bowl. Add in the beef cubes and toss, with a fork to coat.
- Heat the oil in a large, heavy pot over medium-high heat. Brown the beef, in batches, on all sides. Return the beef to pot. Add in the beef broth and apple juice. Cover and simmer over medium heat till the meat is tender, about 1 hour.
- Add in the potatoes, bell peppers, onion, tomatoes with green chilies, tomato sauce and honey. Cover and simmer till the potatoes are tender, about 30 to 35 min.
- Add in the apples and kidney beans. Cover and simmer till the apples are tender, about 15 min. Stir in the minced parsley. Serve in shallow bowls, garnished with the shredded cheese and minced olives.
