Receta Alligator Sauce Piquant Iii

Ingredientes
- 5 lb Alligator meat cut into 1" cubes
- 1 1/2 c. Veg. oil combined with
- 1 c. All-purpose flour for roux
- 4 sm cans Whole tomatoes
- 1 lb Fresh mushrooms sliced
- 3 pt Cool water
- 1 c. Minced celery
- 1/2 c. Minced green onions
- 1/2 c. Minced bell pepper
- 1 sm can Tomato sauce
- 4 x Onions minced
- 2 x Garlic cloves - (2 to 3) crushed
- 1/2 c. Minced parsley Cayenne pepper to taste
- 3 c. Rice cooked
Direcciones
- Saute/fry alligator cubes till tender. In a separate pan, make a roux by veg. oil and flour over low heat till medium-brown, or possibly 1 small can of tomato paste may be used as a substitute for roux mix. Add in cool water to roux, followed by the remaining ingredients and alligator. Simmer approximately 1 hour and serve over cooked rice.
