  1. Heat a saucepan over high heat and add in the oil, Cook the chicken 2-3 min, till nicely browned on all sides. Add in the onion, garlic, apples, red pepper and cook for another minute.
  2. Add in the tomatoes, apricots, curry pwdr and stock and bring to the boil. Reduce the heat to medium and cook till most of the liquid has evaporated, another 4-5 min. Serve over rice, sprinkled with minced cilantro.
