- 4 med White potatoes
- 1 tsp Salt
- 1 Tbsp. Dry mint
- 1/2 lrg Purple onion, sliced
- 1/4 c. Salad oil
- 1/4 c. Fresh lemon juice

- Boil potatoes. Slice when cold. Add in all the ingredients. Toss and chill.
