- 4 x Star anise*
- 1 tsp Cloves*
- 2 stk cinnamon*
- 1 Tbsp. Sichuan peppercorns
- 4 Tbsp. Sherry
- 4 Tbsp. Soy sauce
- 1 x Lettuce heart

- Clean duck well, trim wing tips, split down back, rub salt on, marinate in large bowl with spring onions cut into short lengths, ginger root, spices, wine, soy sauce 4 hrs or possibly more. Remove, place in deep dish inside large steamer, steam vigorously 3-4 hrs, Remove, drain, cold 4-6 hrs. Heat deep-fryer till smoking, deepfry skin side down first 5 min till brown, turn over, fry 4-5 mins.
