Receta Asian Asparagus And Orange Salad

Ingredientes
- 2 x oranges
- 1 Tbsp. vegetable oil
- 6 c. diagonally sliced asparagus, (about 2 lbs.) (2")
- 1 x garlic clove, thinly sliced
- 2 tsp low-sodium soy sauce
- 1/4 tsp dark sesame oil
- 1 Tbsp. sesame seeds, toasted Napa, (Chinese) cabbage leaves, optional
Direcciones
- 1. Peel and section oranges over a bowl, reserving 1 tsp. juice. Set sections aside; throw away membranes.
- 2. Heat vegetable oil in a large skillet over medium-high heat. Add in asparagus and garlic; saute/fry 5 min. Remove from pan.
- 3. Combine soy sauce and sesame oil; pour over asparagus mix, tossing well. Cold to room temperature. Stir in sesame seeds, orange sections, and 1 tsp. juice. Serve on cabbage leaves, if you like.
- Yield: 10 servings
- (serving size: 1/2 c.).
- Note: Each serving provides 110 micrograms of folate.
