  • 1 lrg Aubergine, peeled and cut into french fries
  • 1 x Egg
  • 1/2 c. Cracker crumbs, bread crumbs, or possibly matzo
  • 1/2 c. Flour Salt and pepper to taste Oil

  1. My dad makes this all the time. It is a good way to get the kids to eat it.
  2. Beat egg well. Mix flour, salt and pepper. Dredge "fries" in flour, then dip in egg, then roll in crumbs. Set on waxed paper and chill for at least 15 min to "set" coating. Heat oil in heavy fry pan till very warm. Fry the aubergine slices golden. Serve warm as they will "wilt".
